V. We are what we eat





Digestion is a key element of good health. We need five different vegetables every day keep in the best form.

A varied diet rich in vegetables will protect people from serious diseases and help them to get well in the most pleasant and effective way. The World Health
Organisation (WHO) proposed 12 steps to healthy eating, one of them being "Eat a variety of vegetables and fruits several times per day (400g per day) preferably fresh and local." Despite a short growing season Russians are able to provide themselves with many important vegetables. These are listed in the I table and renowned not only for being nutritious but also for their preventative and healing properties.

Cabbage is used to treat ulcers. It improves the eyesight and helps in cases of chronic cough. Cabbage juice with sesame oil is very good for tonsillitis.

Onion stimulates the appetite. Onion soup is very good for the stomach. Onion with lard cleans the lungs. Marinated in vinegar, onion is helpful in cases of hepatitis and spleen disease.

Carrot cleanses the liver and reduces stomach ache. It is very good for the skin and for the eyes.

Cucumbers have cleansing properties and reduce thirst. They are good for people with high acidity levels. Cucumber seeds clean blood vessels.

Potatoes are noted for how nutritious they are. The juice of raw potatoes is useful for treating ulcers.

Garlic contains many useful substances: it cleanses and opens the blood vessels. Garlic cleanses the throat, helps to restore the voice and is good in cases of asthma and for nervous diseases.

Beetroot dilutes thick blood and cleanses the vessels. It has almost no calories and is very good for digestion. The healthiest part of beet is the leaves and the stems. Beet is helpful for kidney and bladder diseases.
